Excellent and easy to prepare dish. Roulade of beef knuckle, with mustard and honey sauce.

Ingredients
  • about 1.5 kg of knuckle – Qulinary Feast
  • 200 g of smoked, steamed bacon
  • 2 cloves of garlic
  • 5 g of fresh, chopped thyme
  • 50 g of butter
  • 50 g of coarse mustard
  • 20 g of honey
  • 100 ml of gravy
  • salt, freshly ground pepper
Cooking instruction
  • Preparation of the meat:
    Cut the meat into very thin slices, cutting across the fibers. Tenderize the meat using a mallet. Season with salt and pepper. Lay out on a buttered sheet of aluminum foil. Sprinkle with a small amount of finely chopped garlic and thyme. Cut the bacon into very thin strips and place over the marinated meat. Roll the roulade. Twist the endings of the aluminum foil, like a candy wrapper. Place the formed roulade in an oven preheated to 160°C for about 1.5 hours, until the meat is tender. Remove foil, cut the roulade into smaller portions, arrange on a plate. Garnish with the sauce.
  • Preparation of the sauce:
    Pour the gravy into a saucepan, add the mustard and honey, season with freshly ground pepper. Cook for a few minutes.
